- 4 Bell Peppers (red, green, yellow, or orange)
- 1 lb Ground Beef or Turkey (lean)
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 1 can Diced Tomatoes
- 1 cup Rice (optional)
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 1 cup Cheese (optional, shredded mozzarella or cheddar)
- 2 tbsp Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise, discarding the seeds and stems. Place them cut-side up in your baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-5 minutes.
- Add the ground beef or turkey to the skillet. Break it up with a spatula and cook until browned, about 7-10 minutes.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let it simmer for about 5 minutes.
- If using rice, mix it in now to combine with the meat mixture.
- Fill each bell pepper half with the meat mixture and cover with foil.
- Bake for 25-30 minutes. Remove the foil, sprinkle cheese over the top, and bake for another 5-10 minutes until bubbly and golden.
- Serve hot and enjoy!
