Description

A whimsical and colorful take on banana bread that combines rich flavors with delightful pastel hues, perfect for any celebration.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Food coloring (pastel colors)
  • Rainbow sprinkles
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk (or a dairy-free alternative)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan well.
  2. Combine the mashed bananas and melted butter until the mixture is smooth.
  3. Stir in the sugar, then add the beaten egg and vanilla extract.
  4. Blend in the baking soda and pinch of salt, mixing thoroughly.
  5. Fold in the all-purpose flour until just combined.
  6. Divide the batter into several bowls, adding food colors to each.
  7. Spoon the colored batters into the loaf pan in alternating layers.
  8. Bake for about 60 minutes, or until a toothpick comes out clean.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
  10. Whisk together the glaze ingredients and drizzle over the cooled loaf, topping with rainbow sprinkles.
