- 2 lbs Pork Shoulder
- 12 Corn Tortillas
- 1 Onion, chopped
- 1/2 cup Cilantro, chopped
- 1/4 cup Lime Juice
- 1 cup Salsa (your choice)
- 1 cup Pineapple, grilled
- 2 tbsp Achiote Paste
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Oregano
- Salt & Pepper to taste
Instructions
- Marinate the Pork: In a mixing bowl, combine the achiote paste, minced garlic, cumin, oregano, salt, and pepper. Coat the pork shoulder thoroughly with the marinade.
- Cover the marinated pork and let it sit in the refrigerator for at least two hours, or even better, overnight.
- Preheat your grill or oven to medium-high heat. Cook the marinated pork until fully cooked, about 20-25 minutes on the grill or 45-60 minutes in the oven.
- Slice the Pork thinly and let it rest for a few minutes before slicing.
- Warm your tortillas until pliable on the grill or in a heated pan.
- Assemble your tacos: place sliced pork in each tortilla, add chopped onions, cilantro, lime juice, and salsa.
- Serve immediately and enjoy!
Notes
Marinate the pork overnight for deeper flavor. Customize toppings as desired!
