Description

Delightful and wholesome cookies naturally sweetened with dates, perfect for guilt-free indulgence.


Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup almond flour
  • 1/2 cup oats
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: nuts or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Combine the pitted and chopped dates, almond flour, oats, melted coconut oil, vanilla extract, baking soda, and salt in a large mixing bowl. Stir well until a dough forms.
  3. Fold in nuts or dark chocolate chips if desired.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Flatten each cookie with your fingers for a consistent shape.
  6. Bake for 10-12 minutes until the edges are golden brown and the center is set.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
