- 1 cup almond flour

Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Combine the pitted and chopped dates, almond flour, oats, melted coconut oil, vanilla extract, baking soda, and salt in a large mixing bowl. Stir well until a dough forms.
- Fold in nuts or dark chocolate chips if desired.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie with your fingers for a consistent shape.
- Bake for 10-12 minutes until the edges are golden brown and the center is set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
