- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare your baking dish by greasing it or lining with parchment paper.
- Mix the dry ingredients in a large bowl: rolled oats, flour, brown sugar, granulated sugar, and salt.
- Add melted butter and vanilla extract to the dry mixture, stirring until crumbly.
- Create the base by pressing half of the oat mixture into the bottom of the prepared baking dish.
- Prepare the strawberry filling by mixing chopped strawberries with strawberry jam and lemon juice in another bowl.
- Layer the strawberry mixture evenly over the oat base.
- Top with the remaining oat mixture, sprinkling it over the strawberries.
- Bake for 25-30 minutes until golden brown.
- Cool for 10 minutes and slice into squares.
Notes
These bars can be made ahead and stored in the fridge; they also freeze well for longer storage. Customize with nuts or different fruit as desired.
