Description

Delicious and nutritious strawberry oatmeal bars with a perfect balance of sweetness and heartiness, ideal for snacks, breakfast, or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking dish by greasing it or lining with parchment paper.
  3. Mix the dry ingredients in a large bowl: rolled oats, flour, brown sugar, granulated sugar, and salt.
  4. Add melted butter and vanilla extract to the dry mixture, stirring until crumbly.
  5. Create the base by pressing half of the oat mixture into the bottom of the prepared baking dish.
  6. Prepare the strawberry filling by mixing chopped strawberries with strawberry jam and lemon juice in another bowl.
  7. Layer the strawberry mixture evenly over the oat base.
  8. Top with the remaining oat mixture, sprinkling it over the strawberries.
  9. Bake for 25-30 minutes until golden brown.
  10. Cool for 10 minutes and slice into squares.

Notes

These bars can be made ahead and stored in the fridge; they also freeze well for longer storage. Customize with nuts or different fruit as desired.
