- 1 meaty ham bone
- 2 carrots, diced
- 1 onion, diced
- 2 potatoes, diced
- 8 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water, checking for any debris.
- Combine the rinsed split peas, ham bone, diced carrots, onion, potatoes, and broth in a large pot.
- Bring the pot to a rolling boil, then lower the heat to a gentle simmer.
- Allow the soup to simmer for about 60-90 minutes, stirring occasionally.
- Carefully remove the ham bone, shred any meat off, and stir it back into the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
This soup is even better the next day. Store in an airtight container in the fridge for 4-5 days or freeze for up to 3 months.
