Description

A moist and flavorful carrot cake drizzled with salted caramel, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup salted caramel sauce
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Beat the eggs, granulated sugar, brown sugar, and vegetable oil until fluffy.
  4. Add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated carrots and salted caramel sauce gently.
  6. Divide the batter equally between the prepared pans and bake for 25-30 minutes.
  7. Allow the cakes to cool in the pans for about 10 minutes, then cool completely on wire racks.
  8. Beat the cream cheese and unsalted butter until smooth, then add powdered sugar and vanilla until fluffy.
  9. Spread frosting between the layers and on top of the cake; drizzle with additional salted caramel sauce.
  10. Slice, serve, and enjoy every luxurious bite!

Notes

Make the cakes a day in advance for better flavor blending. Allow the cakes to cool completely before frosting.
