Description

  • 1 Cup Dark Rum
  • 1 Cup Coconut Rum
  • 1 ½ Cups All-Purpose Flour
  • 10 oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 oz Cream Cheese
  • ½ Cup Powdered Sugar

Instructions

  1. Soak the pineapple: Immerse your pineapple rings in a delightful mix of dark rum and coconut rum for at least one hour.
  2. Set up your breading station: Arrange three shallow bowls with flour, an egg and coconut milk mixture, and coconut flakes.
  3. Coat each pineapple ring: Dredge in flour, dip in egg mixture, and roll in coconut flakes.
  4. Heat the oil: In your deep fryer or heavy pot, heat vegetable oil to 350°F (175°C).
  5. Fry to golden perfection: Carefully place coated pineapple rings in the hot oil and fry for about one minute per side.
  6. Prepare the dipping sauce: Blend softened cream cheese with powdered sugar and a splash of reserved rum until smooth.
  7. Serve warm: Plate your fried pineapple rings with the creamy dipping sauce.
