Instructions
- Soak the pineapple: Immerse your pineapple rings in a delightful mix of dark rum and coconut rum for at least one hour.
- Set up your breading station: Arrange three shallow bowls with flour, an egg and coconut milk mixture, and coconut flakes.
- Coat each pineapple ring: Dredge in flour, dip in egg mixture, and roll in coconut flakes.
- Heat the oil: In your deep fryer or heavy pot, heat vegetable oil to 350°F (175°C).
- Fry to golden perfection: Carefully place coated pineapple rings in the hot oil and fry for about one minute per side.
