Description

Deliciously moist muffins made with creamy ricotta cheese and bursting with the flavor of ripe bananas and citrus zest.


Ingredients

  • 1 cup ricotta cheese
  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon grated orange zest
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the ricotta, mashed bananas, sugar, and melted butter until smooth and creamy.
  3. Add the eggs and vanilla extract, stirring well until everything is combined.
  4. Whisk together the flour, baking powder, baking soda, salt, and citrus zests in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack.
