- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon grated orange zest
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the ricotta, mashed bananas, sugar, and melted butter until smooth and creamy.
- Add the eggs and vanilla extract, stirring well until everything is combined.
- Whisk together the flour, baking powder, baking soda, salt, and citrus zests in a separate bowl.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack.
