Description

Decadent brownies infused with refreshing mint and studded with chocolate chips, perfect for any occasion.


Ingredients

  • 1/2 teaspoon peppermint extract
  • 1/2 cup mint chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan, or line it with parchment paper for easy removal.
  2. Melt the butter in a microwavable bowl—this can take about 30 seconds to 1 minute.
  3. Stir in the granulated sugar until fully combined.
  4. Add in the eggs and vanilla extract, mixing well until everything is cohesive.
  5. Sift together the flour, cocoa powder, and salt in another bowl.
  6. Incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  7. Fold in the chocolate chips and peppermint extract.
  8. Pour the batter into your prepared baking pan, spreading it evenly.
  9. Bake for 20-25 minutes, checking with a toothpick for doneness.
  10. Allow to cool in the pan before transferring to a cooling rack and cutting into squares.

Notes

For a dairy-free version, substitute butter with coconut oil. To enhance flavor, refrigerate the brownie batter overnight before baking.
