Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan, or line it with parchment paper for easy removal.
- Melt the butter in a microwavable bowl—this can take about 30 seconds to 1 minute.
- Stir in the granulated sugar until fully combined.
- Add in the eggs and vanilla extract, mixing well until everything is cohesive.
- Sift together the flour, cocoa powder, and salt in another bowl.
- Incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips and peppermint extract.
- Pour the batter into your prepared baking pan, spreading it evenly.
- Bake for 20-25 minutes, checking with a toothpick for doneness.
- Allow to cool in the pan before transferring to a cooling rack and cutting into squares.
Notes
For a dairy-free version, substitute butter with coconut oil. To enhance flavor, refrigerate the brownie batter overnight before baking.
