- 1 pound ground beef
- 1 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup enchilada sauce
- 1 cup diced tomatoes
- 1 avocado, diced
- Lime juice
- Fresh cilantro (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground beef, breadcrumbs, egg, minced garlic, cumin, chili powder, salt, and pepper in a bowl. Mix until well combined.
- Form the mixture into meatballs about 1 to 1.5 inches in diameter.
- Place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until cooked through and golden brown.
- Heat the enchilada sauce in a saucepan over medium heat.
- Add the cooked meatballs to the sauce and coat well. Simmer for a few minutes.
- Mix diced tomatoes and avocado in a bowl, add lime juice, and season with salt and pepper.
- Serve the meatballs with the salad, garnished with fresh cilantro.
Notes
These meatballs freeze beautifully; just be sure to thaw before cooking. Customize with ground turkey or chicken for a lighter option.
