Description

These savory Mexican Beef Meatballs are bursting with flavor and perfectly spiced, simmered in rich enchilada sauce and topped with fresh avocados.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup enchilada sauce
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • Lime juice
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef, breadcrumbs, egg, minced garlic, cumin, chili powder, salt, and pepper in a bowl. Mix until well combined.
  3. Form the mixture into meatballs about 1 to 1.5 inches in diameter.
  4. Place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until cooked through and golden brown.
  6. Heat the enchilada sauce in a saucepan over medium heat.
  7. Add the cooked meatballs to the sauce and coat well. Simmer for a few minutes.
  8. Mix diced tomatoes and avocado in a bowl, add lime juice, and season with salt and pepper.
  9. Serve the meatballs with the salad, garnished with fresh cilantro.

Notes

These meatballs freeze beautifully; just be sure to thaw before cooking. Customize with ground turkey or chicken for a lighter option.
