Description

A vibrant celebration of flavors, this Mediterranean Pasta features sun-dried tomatoes, briny olives, creamy feta, and aromatic basil for a delightful dish perfect for any occasion.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 4 tbsp extra virgin olive oil
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Heat olive oil: In a large skillet, pour in olive oil and heat over medium.
  3. Sauté garlic: Add the minced garlic to the skillet. Sauté for about 30 seconds, or until fragrant.
  4. Add ingredients: Stir in the sun-dried tomatoes and olives, allowing them to warm for about 2-3 minutes.
  5. Toss with feta: Add the drained pasta and crumbled feta to the skillet. Toss gently to combine.
  6. Season it up: Taste and season with salt and freshly cracked black pepper. Use reserved pasta water to adjust consistency if needed.
  7. Garnish: Finish with olive oil and fresh basil leaves.
  8. Serve warm: Plate and enjoy!
