- 8 oz pasta (penne or fusilli)
- 1 cup sun-dried tomatoes
- 3 cloves garlic, minced
- 1 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 4 tbsp extra virgin olive oil
- Salt and black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Cook the pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- Heat olive oil: In a large skillet, pour in olive oil and heat over medium.
- Sauté garlic: Add the minced garlic to the skillet. Sauté for about 30 seconds, or until fragrant.
- Add ingredients: Stir in the sun-dried tomatoes and olives, allowing them to warm for about 2-3 minutes.
- Toss with feta: Add the drained pasta and crumbled feta to the skillet. Toss gently to combine.
- Season it up: Taste and season with salt and freshly cracked black pepper. Use reserved pasta water to adjust consistency if needed.
- Garnish: Finish with olive oil and fresh basil leaves.
