Description

A flavorful Mediterranean Grilled Chicken Bowl featuring marinated grilled chicken, fresh vegetables, and creamy tzatziki sauce, perfect for meal prep.


Ingredients

  • 2 Chicken Breasts, marinated
  • 1 Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, thinly sliced
  • 1 cup Rice or Cauliflower Rice
  • 1 cup Tzatziki Sauce
  • ½ cup Kalamata Olives (optional)
  • ½ cup Feta Cheese (optional)
  • Fresh Herbs (optional, such as parsley or mint)
  • 1 Lemon, juiced

Instructions

  1. Grill the chicken: Preheat the grill or grill pan to medium-high heat. Marinate the chicken breasts and grill for about 6-7 minutes on each side until cooked through.
  2. Prepare the vegetables: Chop the cucumber and tomatoes, and slice the red onion thinly.
