- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat the olive oil in a large pot over medium heat.
- Season both sides of the chicken breasts with salt, pepper, and Italian seasoning and add to the pot, cooking until golden brown, about 6-7 minutes. Remove and set aside.
- Sauté the chopped onion and minced garlic in the same pot for 2-3 minutes until fragrant.
- Add the orzo and toast for about a minute.
- Incorporate the chicken broth and heavy cream, stirring to combine, and bring to a gentle simmer.
- Stir in the sun-dried tomatoes and spinach.
- Return the chicken to the pot, cover, and let simmer for 10-12 minutes until the orzo is tender.
- Taste and adjust seasoning with salt and pepper before serving.
