Delightful lemon cream-filled donuts with a crispy exterior and creamy lemon filling.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup lemon curd (for filling)
- Powdered sugar or glaze (for topping)
Instructions
- In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well to ensure the dry ingredients are evenly distributed.
- In another bowl, whisk together the milk, eggs, melted butter, and vanilla until smooth.
- Gradually stir the wet ingredients into the dry ingredients until just combined. Avoid over-mixing.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Using a donut cutter, cut out shapes from the dough.
- Carefully place the donuts into hot oil, frying until golden brown, approximately 2-3 minutes per side.
- Remove the donuts from the oil and place them on paper towels to drain.
- After cooling slightly, fill each donut with lemon curd using a piping bag.
- Finish with powdered sugar or glaze before serving.
Notes
You can prepare lemon curd and dough ahead of time. Use an air fryer for a lighter version.
