Description

Delightful lemon cream-filled donuts with a crispy exterior and creamy lemon filling.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup lemon curd (for filling)
  • Powdered sugar or glaze (for topping)

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well to ensure the dry ingredients are evenly distributed.
  2. In another bowl, whisk together the milk, eggs, melted butter, and vanilla until smooth.
  3. Gradually stir the wet ingredients into the dry ingredients until just combined. Avoid over-mixing.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Using a donut cutter, cut out shapes from the dough.
  6. Carefully place the donuts into hot oil, frying until golden brown, approximately 2-3 minutes per side.
  7. Remove the donuts from the oil and place them on paper towels to drain.
  8. After cooling slightly, fill each donut with lemon curd using a piping bag.
  9. Finish with powdered sugar or glaze before serving.

Notes

You can prepare lemon curd and dough ahead of time. Use an air fryer for a lighter version.
