Ingredients

- 2 cups kale, chopped
- 1 can chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 carrot, grated
- 1/4 cup red onion, thinly sliced
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Combine the chopped kale, rinsed chickpeas, halved cherry tomatoes, diced cucumber, grated carrot, and thinly sliced red onion in a large mixing bowl. Toss gently to mix.
- Whisk together the tahini, lemon juice, olive oil, salt, and pepper in a separate bowl until smooth.
- Pour the tahini dressing over the salad. Toss well to coat everything evenly.
- Allow the salad to sit for a few minutes to let the flavors meld.
