Description

A vibrant and refreshing salad that combines the crunch of kale with tender chickpeas, sweet cherry tomatoes, and a creamy tahini dressing.


Ingredients

Scale
  • 2 cups kale, chopped
  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the chopped kale, rinsed chickpeas, halved cherry tomatoes, diced cucumber, grated carrot, and thinly sliced red onion in a large mixing bowl. Toss gently to mix.
  2. Whisk together the tahini, lemon juice, olive oil, salt, and pepper in a separate bowl until smooth.
  3. Pour the tahini dressing over the salad. Toss well to coat everything evenly.
  4. Allow the salad to sit for a few minutes to let the flavors meld.
  5. Serve in bowls and enjoy your light, healthy meal!
