Description

Comforting and flavorful refried beans made effortlessly in an Instant Pot, perfect for a variety of dishes.


Ingredients

  • 2 cups dried pinto beans
  • 6 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil
  • Optional toppings: cheese, cilantro, lime juice

Instructions

  1. Prepare the beans: Rinse the dried pinto beans under cool water, sifting through them to remove any rocks or debris.
  2. Combine ingredients: In your Instant Pot, combine the beans, water, chopped onion, minced garlic, cumin, salt, and pepper.
  3. Cook on high pressure: Secure the lid and cook for 45 minutes.
  4. Release pressure: Let the pressure release naturally for 10 minutes, then quick release any remaining steam.
  5. Mash to perfection: Carefully drain excess liquid if necessary, then mash the beans to your preferred consistency.
  6. Add olive oil and adjust: Stir in olive oil and adjust seasoning if needed.
  7. Serve warm: Transfer to a serving dish and add optional toppings.
