Instructions
- Prepare the beans: Rinse the dried pinto beans under cool water, sifting through them to remove any rocks or debris.
- Combine ingredients: In your Instant Pot, combine the beans, water, chopped onion, minced garlic, cumin, salt, and pepper.
- Cook on high pressure: Secure the lid and cook for 45 minutes.
- Release pressure: Let the pressure release naturally for 10 minutes, then quick release any remaining steam.
- Mash to perfection: Carefully drain excess liquid if necessary, then mash the beans to your preferred consistency.
- Add olive oil and adjust: Stir in olive oil and adjust seasoning if needed.
- Serve warm: Transfer to a serving dish and add optional toppings.
