- Combine Dry Ingredients: In a large mixing bowl, whisk together all-purpose flour, whole wheat flour, rolled oats, and salt until well mixed.
- Mix Wet Ingredients: In another bowl, whisk together sourdough starter, warm water, honey, and olive oil, ensuring the honey is fully dissolved.
- Create the Dough: Gradually add the wet mixture to the dry ingredients, stirring until a shaggy dough forms.
- Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.
- Let It Rise: Transfer the dough to a greased bowl, cover with a damp cloth, and let it rise in a warm place for 4-6 hours or until doubled in size.
- Preheat the Oven: Set your oven to 375°F (190°C) for baking.
- Shape the Loaf: Gently punch down the risen dough and shape it into a loaf, tucking in the edges.
- Second Rise: Place the loaf in a greased pan, cover loosely, and allow it to rise again for 1-2 hours.
- Bake: Bake for 30-35 minutes until golden brown and hollow sounding when tapped.
- Cool and Slice: Cool in the pan for 10 minutes before transferring to a wire rack and letting it cool for 30 minutes before slicing.
