- 4 chicken thighs
- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup smoked Gouda cheese, shredded
- Butter to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Combine chipotle honey, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
- Coat each chicken thigh with the marinade, and place them skin-side up in a baking dish.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Boil salted water and add the cubed potatoes, cooking until tender, about 15 minutes.
- Drain the potatoes, mash with milk and butter until smooth, and stir in shredded gouda.
- Serve the chicken thighs with gouda mashed potatoes, drizzling leftover chipotle honey sauce on top.
Notes
Marinate the chicken overnight for deeper flavor. Consider using an air fryer for a crispy exterior.
