Description

Experience the warm embrace of roasted chicken thighs marinated in chipotle honey, served alongside creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle honey sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup smoked Gouda cheese, shredded
  • Butter to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine chipotle honey, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
  3. Coat each chicken thigh with the marinade, and place them skin-side up in a baking dish.
  4. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  5. Boil salted water and add the cubed potatoes, cooking until tender, about 15 minutes.
  6. Drain the potatoes, mash with milk and butter until smooth, and stir in shredded gouda.
  7. Serve the chicken thighs with gouda mashed potatoes, drizzling leftover chipotle honey sauce on top.

Notes

Marinate the chicken overnight for deeper flavor. Consider using an air fryer for a crispy exterior.
