- 2 cups potatoes, peeled and cubed

- 1/4 cup smoked Gouda cheese, shredded
- Butter to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the marinade by combining chipotle honey, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
- Coat each chicken thigh with the marinade and place in a baking dish skin-side up.
- Bake the chicken for 25-30 minutes, ensuring the internal temperature reaches 165°F (75°C).
- Prepare the potatoes by boiling them in salted water until tender, about 15 minutes.
- Mash the drained potatoes with milk and butter until smooth, then stir in the smoked gouda cheese until melted.
- Plate the chicken thighs with the gouda mashed potatoes and drizzle any remaining chipotle honey sauce on top.
Notes
For deeper flavor, marinate the chicken overnight. Ensure potatoes are tender before mashing for the creamiest texture.
