- 2 cups sourdough starter
- 4 cups bread flour
- 1 tablespoon salt
- 1 tablespoon sugar
- 1 tablespoon baking soda
- Water for boiling
- Toppings (sesame seeds, poppy seeds, etc.)
Instructions
- Mix the sourdough starter, bread flour, salt, and sugar in a large mixing bowl until a shaggy dough forms.
- Knead the dough for about 10 minutes until it feels smooth and elastic.
- Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let rise for 4-6 hours until doubled in size.
- Preheat your oven to 425°F (220°C) about 30 minutes before the dough is ready.
- Punch down the risen dough, divide into 8-12 pieces, and shape into bagels.
- Boil each bagel in a large pot of boiling water with baking soda for 1-2 minutes on each side.
- Sprinkle your chosen toppings on the bagels while moist and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Allow to cool briefly before slicing and serving with your favorite toppings.
Notes
Bagels can be stored in a sealed bag for up to 3 days or frozen for up to 3 months.
