Description

Delightful skewers of marinated tofu grilled to perfection with colorful vegetables, infused with aromatic za’atar seasoning.


Ingredients

  • 3 tablespoons za’atar spice mix
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Vegetables for skewering (e.g., bell peppers, onion, cherry tomatoes)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together the za’atar spice mix, olive oil, lemon juice, salt, and pepper until smooth.
  2. Marinate the Tofu: Add the cubed tofu to the marinade. Use a spatula to gently fold the tofu, ensuring every piece is coated. Let it sit for at least 30 minutes.
  3. Skewer Up: Once marinated, thread the tofu and fresh vegetables onto the skewers, alternating for a colorful presentation.
  4. Get Grilling: Preheat your grill to medium heat.
  5. Grill to Perfection: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally for even grilling.
  6. Serve Warm: Once ready, remove the skewers from the grill and serve garnished with fresh herbs if desired.

Notes

For a richer taste, marinate the tofu a day in advance. You can also use an air fryer or roast them in the oven as alternatives to grilling.
