Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the za’atar spice mix, olive oil, lemon juice, salt, and pepper until smooth.
- Marinate the Tofu: Add the cubed tofu to the marinade. Use a spatula to gently fold the tofu, ensuring every piece is coated. Let it sit for at least 30 minutes.
- Skewer Up: Once marinated, thread the tofu and fresh vegetables onto the skewers, alternating for a colorful presentation.
- Get Grilling: Preheat your grill to medium heat.
- Grill to Perfection: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally for even grilling.
- Serve Warm: Once ready, remove the skewers from the grill and serve garnished with fresh herbs if desired.
Notes
For a richer taste, marinate the tofu a day in advance. You can also use an air fryer or roast them in the oven as alternatives to grilling.
