Ingredients
- Colorful Peppers (red, yellow, green): 3, cut into chunks
- Zucchini: 1 large, sliced
- Mushrooms: 8 oz, whole or halved
- Olive Oil: 3 tablespoons
- Salt: 1 teaspoon
- Pepper: 1/2 teaspoon
- Fresh Herbs (parsley, cilantro, or basil): 1/4 cup, chopped
- Garlic: 2 cloves, minced
- Lemon Juice: 2 tablespoons
- Red Pepper Flakes (optional): 1/4 teaspoon
Instructions
- Preheat the grill to medium-high heat.
- Cut the peppers, zucchini, and mushrooms into uniform pieces.
- Toss the vegetables with olive oil, salt, and pepper in a mixing bowl.
- Thread the veggies onto skewers, alternating colors and shapes.
- Grill the skewers for 10-15 minutes, turning occasionally.
- Combine fresh herbs, garlic, lemon juice, olive oil, and red pepper flakes in a blender for the chimichurri.
- Drizzle chimichurri over the skewers just before serving.
