Description

Delicious and vibrant Grilled Veggie Skewers tossed with homemade chimichurri, perfect for summer barbecues.


Ingredients

  • Colorful Peppers (red, yellow, green): 3, cut into chunks
  • Zucchini: 1 large, sliced
  • Mushrooms: 8 oz, whole or halved
  • Olive Oil: 3 tablespoons
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Fresh Herbs (parsley, cilantro, or basil): 1/4 cup, chopped
  • Garlic: 2 cloves, minced
  • Lemon Juice: 2 tablespoons
  • Red Pepper Flakes (optional): 1/4 teaspoon

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the peppers, zucchini, and mushrooms into uniform pieces.
  3. Toss the vegetables with olive oil, salt, and pepper in a mixing bowl.
  4. Thread the veggies onto skewers, alternating colors and shapes.
  5. Grill the skewers for 10-15 minutes, turning occasionally.
  6. Combine fresh herbs, garlic, lemon juice, olive oil, and red pepper flakes in a blender for the chimichurri.
  7. Drizzle chimichurri over the skewers just before serving.
