- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- Fondant for decorating
Instructions
- Preheat your oven to 375°F (190°C).
- Stir together the flour, baking soda, and baking powder in a small bowl.
- Cream together the softened butter and sugar in a large bowl until smooth and fluffy.
- Beat in the egg, vanilla extract, and almond extract until fully incorporated.
- Gradually blend in the dry ingredients from the small bowl.
- Roll rounded teaspoonfuls of dough into balls and place on ungreased cookie sheets, slightly flattening each ball.
- Bake for 8 to 10 minutes or until golden.
- Remove from the oven and cool on the cookie sheets for a few minutes before transferring to wire racks.
- Decorate cooled cookies with fondant to create mortarboard hats.
Notes
Make dough in advance and refrigerate for up to three days. You can also freeze unbaked dough. Avoid overmixing to prevent tough cookies.
