A warm and comforting German Potato Salad, featuring baby potatoes wrapped in a tangy blend of bacon, shallots, and herbs.
Ingredients

- 1 lb Baby Potatoes
- 4 slices Bacon
- 1 cup Onions, chopped
- 1 cup Shallots, chopped
- 1/4 cup Chives, chopped
- 1/4 cup Apple cider or white wine vinegar
- 1 tbsp German or yellow mustard
- 2 tbsp Olive oil
- Salt and Pepper to taste
Instructions
- Boil the potatoes in a heavy-bottomed pot with salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
- Cook the bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain, then chop into pieces.
- Sauté the onions and shallots in the same skillet until soft and fragrant.
- Combine vinegar, mustard, olive oil, salt, and pepper in a bowl and whisk together.
- Slice the cooled potatoes into halves or quarters.
- Fold together the potatoes, bacon, sautéed onions, shallots, and chives in a mixing bowl.
- Pour the dressing over the mixture and toss gently to coat.
- Serve warm or at room temperature.
Notes
For best flavor, make the salad in advance and let it sit overnight. Refresh with additional vinegar before serving.
