Description

A warm and comforting German Potato Salad, featuring baby potatoes wrapped in a tangy blend of bacon, shallots, and herbs.


Ingredients

  • 1 lb Baby Potatoes
  • 4 slices Bacon
  • 1 cup Onions, chopped
  • 1 cup Shallots, chopped
  • 1/4 cup Chives, chopped
  • 1/4 cup Apple cider or white wine vinegar
  • 1 tbsp German or yellow mustard
  • 2 tbsp Olive oil
  • Salt and Pepper to taste

Instructions

  1. Boil the potatoes in a heavy-bottomed pot with salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
  2. Cook the bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain, then chop into pieces.
  3. Sauté the onions and shallots in the same skillet until soft and fragrant.
  4. Combine vinegar, mustard, olive oil, salt, and pepper in a bowl and whisk together.
  5. Slice the cooled potatoes into halves or quarters.
  6. Fold together the potatoes, bacon, sautéed onions, shallots, and chives in a mixing bowl.
  7. Pour the dressing over the mixture and toss gently to coat.
  8. Serve warm or at room temperature.

Notes

For best flavor, make the salad in advance and let it sit overnight. Refresh with additional vinegar before serving.
