Description

Fresh Tuna Cucumber Boats are a refreshing and flavorful appetizer that combines crisp cucumbers with a creamy tuna filling, perfect for any gathering or light lunch.

Ingredients

Scale
  • 2 medium cucumbers
  • 1 can of tuna (drained)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh dill or parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the cucumbers: Slice the cucumbers in half lengthwise. Using a spoon, carefully scoop out some of the seeds to create an inviting boat shape.
  2. Mix the filling: In a mixing bowl, combine the tuna, mayonnaise, Dijon mustard, and herbs. Season with salt and pepper. Mix until smooth.
  3. Fill the cucumber boats: Spoon the tuna mixture into each cucumber half, mounding it nicely.
  4. Serve immediately on a platter, garnished with fresh herbs or lemon wedges.

Notes

Make-Ahead Tips: Prepare the tuna filling in advance and store in an airtight container for up to 2 days. Assemble the boats just before serving to keep cucumbers crisp.
