Description

A vibrant salad featuring mixed greens, freshly grated Parmesan, and zesty lemon dressing that brightens up any meal.


Ingredients

  • Mixed greens (arugula, spinach, romaine)
  • Freshly grated Parmesan cheese
  • Fresh lemon juice
  • Extra virgin olive oil
  • Salt
  • Black pepper
  • Cherry tomatoes (optional)
  • Cucumber (optional)

Instructions

  1. In a large bowl, combine the mixed greens.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until blended.
  3. Pour the dressing over the greens, tossing gently to coat.
  4. Add the freshly grated Parmesan cheese and optional cherry tomatoes and cucumber.

Notes
