- 2 pounds of skinless, boneless chicken breasts
- 1 cup of barbecue sauce
- 1 cup of corn
- 1 cup of black beans
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste

Instructions
- Layer the chicken breasts in the bottom of your crockpot.
- Pour the barbecue sauce over the chicken, coating them generously.
- Add the corn, black beans, chopped onions, and bell pepper over the chicken.
- Season with salt and pepper to enhance the flavors.
- Cover and cook on low for 360-480 minutes or on high for about 240 minutes.
- Shred the chicken into bite-sized pieces after cooking.
- Garnish with chopped cilantro and serve.
Notes
For a make-ahead meal, assemble the crockpot ingredients the night before and refrigerate until ready to cook. This recipe can also be adapted for the oven or air fryer.
