Description

A hearty and flavorful crockpot meal featuring tender chicken, barbecue sauce, bell peppers, and black beans for a satisfying summer dinner.


Ingredients

  • 2 pounds of skinless, boneless chicken breasts
  • 1 cup of barbecue sauce
  • 1 cup of corn
  • 1 cup of black beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Layer the chicken breasts in the bottom of your crockpot.
  2. Pour the barbecue sauce over the chicken, coating them generously.
  3. Add the corn, black beans, chopped onions, and bell pepper over the chicken.
  4. Season with salt and pepper to enhance the flavors.
  5. Cover and cook on low for 360-480 minutes or on high for about 240 minutes.
  6. Shred the chicken into bite-sized pieces after cooking.
  7. Garnish with chopped cilantro and serve.

Notes

For a make-ahead meal, assemble the crockpot ingredients the night before and refrigerate until ready to cook. This recipe can also be adapted for the oven or air fryer.
