Description

A vibrant and refreshing pasta salad that combines the flavors of green olives, cherry tomatoes, and a creamy olive oil dressing, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup green olives, pitted and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook your chosen pasta according to package instructions. Drain and let it cool.
  2. Combine ingredients: In a large mixing bowl, combine the cooled pasta, sliced olives, halved cherry tomatoes, finely chopped red onion, parsley, and basil. Toss gently to mix.
  3. Make the dressing: In a small bowl, add the olive oil, lemon juice, Dijon mustard, salt, and pepper. Whisk vigorously until the dressing is well-blended.
  4. Dress the salad: Pour the dressing over the pasta mixture and toss until everything is evenly coated.
