Description

A comforting and hearty dish with tender beef, vibrant bell peppers, and creamy cheese sauce, all simmered to perfection in a Crock Pot.


Ingredients

  • 1 pound of beef (thinly sliced ribeye or ground beef)
  • 1 package of cheese tortellini (fresh or frozen)
  • 2 cups of bell peppers (sliced)
  • 1 onion (sliced)
  • 1 cup of provolone cheese (shredded)
  • 1 cup of heavy cream or cream cheese
  • Salt and pepper to taste
  • 1 tablespoon of Italian seasoning

Instructions

  1. Add the beef to your slow cooker and top it with the sliced bell peppers and onion.
  2. Pour in the heavy cream or cream cheese, then stir gently until everything is well mixed and coated.
  3. Season the mixture with salt, pepper, and Italian seasoning.
  4. Cover the cooker and set it to low for 6-8 hours or high for 3-4 hours.
  5. Stir in the cheese tortellini and shredded provolone cheese about 30 minutes before serving.
  6. Cook until the tortellini is heated through and the cheese has melted.
  7. Serve warm, garnished with additional cheese or fresh herbs if desired.
