- 8 oz pasta (penne or fettuccine)
- 1 lb smoked sausage, sliced
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta by bringing a pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain and set aside.
- Brown the sausage in a large skillet over medium heat with olive oil until golden brown and fragrant.
- Sauté the onion, garlic, and bell pepper in the skillet for about 5–7 minutes until softened.
- Create the sauce by stirring in the heavy cream, chicken broth, and Cajun seasoning. Allow it to simmer until thickened.
- Combine the cooked pasta with the sauce, tossing to coat thoroughly. Season with salt and pepper to taste.
- Garnish with freshly chopped parsley and serve immediately.
Notes
Feel free to substitute turkey or chicken sausage for a lighter option or use plant-based sausage for a vegetarian dish. Store leftovers in an airtight container for up to three days.
