Description

This delightful corn on the cob is topped with creamy mayonnaise and crumbled cotija cheese, making it the perfect summer side dish.


Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Prep the corn: Carefully remove the husks and silks from the corn. Rinse each ear under cold running water.
  2. Microwave for tenderness: Place the cleaned ears in a microwave-safe dish, cover with a damp paper towel, and microwave on high for 3-5 minutes.
  3. Mix the toppings: In a mixing bowl, combine the mayonnaise, lime juice, chili powder, and salt. Stir until well blended.
  4. Slather on the goodness: Use a basting brush to spread the creamy mixture over the cooked corn.
  5. Sprinkle and serve: Generously sprinkle cotija cheese over the corn. Serve immediately.

Notes
