- 1 lb Rainbow Carrots, cut into 1–2 inch pieces
- 2 tbsp Olive Oil
- 1 tsp Fresh Rosemary, chopped
- 1 tsp Fresh Thyme, chopped
- 2 tbsp Fresh Parsley, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, then cut them into uniform pieces.
- Toss the carrots with olive oil, rosemary, thyme, parsley, salt, and pepper in a mixing bowl.
- Spread the carrots on a rimmed baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway through.
- Remove from the oven when golden brown and serve warm.
Notes
You can prep the carrots up to a day in advance; store in the fridge until ready to roast.
