Description

A comforting and flavorful one-pot dish featuring tender chicken, aromatic spices, and creamy coconut milk, served with fragrant jasmine rice.


Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup jasmine rice
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. Heat a drizzle of oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion turns translucent, about 3-4 minutes.
  2. Toss in the diced chicken, seasoning it generously with salt and pepper. Cook until browned on all sides, roughly 5-7 minutes.
  3. Stir in the turmeric and jasmine rice, toasting them together for about a minute.
  4. Pour in the chicken broth and coconut milk, bringing the mixture to a gentle boil.
  5. Reduce the heat to low, cover, and let it simmer until the rice is cooked and the chicken is tender, about 15-20 minutes.
  6. Taste and adjust seasoning with salt and pepper. Serve warm garnished with fresh cilantro and lime wedges.

Notes

For added depth, consider adding a dash of soy sauce or fish sauce during the simmer. This dish is excellent for meal prep and freezes well.
