Ingredients
Scale
- 2 cups warm water (110°F)
- 1 packet (2 ¼ teaspoons) active dry yeast
- 1/4 cup granulated sugar (divided)
- 5 cups all-purpose flour (plus extra for dusting)
- 1 teaspoon salt
- 1/4 cup baking soda
- 1 egg (beaten, for egg wash)
- 1/2 cup unsalted butter (melted)
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon
Instructions
- Activate the yeast: In a large bowl, combine the warm water, yeast, and 1 tablespoon of granulated sugar. Let it sit for about 5 minutes until foamy.
- Mix the dough: Incorporate the remaining sugar, flour, and salt into the yeast mixture. Stir until a dough forms, then knead on a floured surface for about 5 minutes.
- Let it rise: Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour.
- Preheat the oven: Preheat to 425°F (220°C).
- Prepare for boiling: In a pot, bring 10 cups of water and baking soda to a boil.
- Shape the pretzels: Punch down the dough, divide into 8 pieces, roll into ropes, and twist into pretzel shapes.
- Boil the pretzels: Boil each pretzel for about 30 seconds, then remove with a slotted spoon.
- Egg wash and cinnamon sugar: Brush each pretzel with beaten egg, then sprinkle with the cinnamon sugar mix.
- Bake: Bake for 12-15 minutes or until golden brown.
- Final touch: Brush warm pretzels with melted butter before serving.
Notes
For a crisper pretzel, try using an air fryer. You can also customize toppings with sea salt or caramel.
