Description

Delightful churro muffins combine fluffy muffin texture with a crispy cinnamon-sugar coating and a gooey dulce de leche center.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup dulce de leche or caramel sauce
  • 1/4 cup sugar (for coating)
  • 2 tsp cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Mix the melted butter and sugar until smooth in another bowl.
  4. Add the egg and vanilla to the butter mixture, whisking until combined.
  5. Gradually alternate adding the flour mixture and milk to the wet ingredients, mixing gently.
  6. Fill each muffin cup halfway, add a dollop of dulce de leche, then top with more batter.
  7. Bake for 15-18 minutes or until a toothpick comes out clean.
  8. Roll the warm muffins in the cinnamon sugar mixture until coated.

Notes

Customize with chocolate chips or nuts for extra flavor. Make the batter ahead of time and store in the fridge for easy baking.
