- 8 oz pasta (penne, fusilli, or spaghetti)
- 1 tablespoon olive oil
- 1 cup chorizo, sliced
- 1 cup chicken breast, diced
- 2 cups diced tomatoes
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced chorizo and diced chicken; sauté for 5-7 minutes until browned.
- Stir in diced tomatoes, heavy cream, chili powder, garlic powder, salt, and pepper; let simmer.
- Add pasta to the pot, stir well to combine.
- Cook according to pasta package directions, approximately 8-10 minutes until al dente.
- If sauce thickens too much, add reserved pasta water to adjust consistency.
- Serve hot, garnished with freshly chopped cilantro.
Notes
For a lighter option, substitute heavy cream with half-and-half or a plant-based cream. Customize with vegetables like bell peppers or spinach.
