- 8 oz pasta (spaghetti or fettuccine)
- 2 chicken breasts (boneless)
- 1/4 cup flour
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup capers
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Cook the Pasta: Boil a large pot of salted water, add the pasta, and cook according to package instructions until al dente.
- Prepare the Chicken: Season each chicken breast with salt and pepper, then coat in flour.
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes per side until golden brown.
- Create the Sauce: In the same skillet, reduce heat, add minced garlic and sauté for about a minute, then add chicken broth and lemon juice.
- Incorporate Capers: Stir in capers and simmer for a couple of minutes.
- Combine with Pasta: Add drained pasta to the skillet, tossing to coat in the sauce.
- Slice & Serve: Slice chicken and place over pasta, garnish with parsley.
Notes
For a creamier sauce, stir in a splash of cream after adding the broth.
