Description

A delightful balance of savory chicken, tangy lemon, and briny capers come together in this creamy, comforting Chicken Piccata Pasta.

Ingredients

Scale
  • 8 oz pasta (spaghetti or fettuccine)
  • 2 chicken breasts (boneless)
  • 1/4 cup flour
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup capers
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Cook the Pasta: Boil a large pot of salted water, add the pasta, and cook according to package instructions until al dente.
  2. Prepare the Chicken: Season each chicken breast with salt and pepper, then coat in flour.
  3. Sear the Chicken: Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes per side until golden brown.
  4. Create the Sauce: In the same skillet, reduce heat, add minced garlic and sauté for about a minute, then add chicken broth and lemon juice.
  5. Incorporate Capers: Stir in capers and simmer for a couple of minutes.
  6. Combine with Pasta: Add drained pasta to the skillet, tossing to coat in the sauce.
  7. Slice & Serve: Slice chicken and place over pasta, garnish with parsley.

Notes

For a creamier sauce, stir in a splash of cream after adding the broth.
