- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup rolled oats
- 1/2 cup butterscotch chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl until well blended.
- Beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3–4 minutes.
- Introduce the egg and vanilla extract, blending thoroughly.
- Add the dry ingredients to the wet mixture, stirring gently until just incorporated.
- Fold in the grated carrots, oats, and butterscotch chips carefully.
- Scoop generous tablespoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes until the edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Feel free to customize by substituting butterscotch chips with chocolate chips or adding nuts.
