Description

Delightful carrot cake cookies with a comforting blend of spices, grated carrots, and butterscotch chips.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup rolled oats
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl until well blended.
  3. Beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3–4 minutes.
  4. Introduce the egg and vanilla extract, blending thoroughly.
  5. Add the dry ingredients to the wet mixture, stirring gently until just incorporated.
  6. Fold in the grated carrots, oats, and butterscotch chips carefully.
  7. Scoop generous tablespoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 10–12 minutes until the edges are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Feel free to customize by substituting butterscotch chips with chocolate chips or adding nuts.
