Description

A comforting and creamy broccoli cheddar soup perfect for chilly evenings.


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup sharp cheddar cheese, grated
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Sauté onions and garlic in olive oil or butter over medium heat for 3-4 minutes.
  2. Add broccoli florets and sauté for another 3-4 minutes.
  3. Sprinkle flour over the mixture and cook for one minute.
  4. Pour in vegetable broth gradually while stirring, and bring to a gentle simmer for 10-15 minutes.
  5. Stir in heavy cream and cheddar cheese until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

For a creamier texture, use an immersion blender before adding cheese. For added nutrition, mix in more veggies.
