Description

Soft, fluffy cinnamon rolls infused with ripe banana flavor, offering a delightful balance of sweetness and warmth, perfect for breakfast or dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1 tsp vanilla extract for glaze

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk and sugar. Sprinkle the yeast over the top and let it sit until frothy, about 5-10 minutes.
  2. Mix wet ingredients: In a large bowl, combine mashed bananas, melted butter, eggs, and vanilla extract. Stir until well blended.
  3. Combine mixtures: Add the frothy yeast mixture to the banana mixture and stir to combine.
  4. Add dry ingredients: Gradually introduce flour, cinnamon, nutmeg, and salt, mixing until a soft dough forms.
  5. Knead the dough for about 5-7 minutes until smooth and elastic.
  6. First rise: Place the dough in a greased bowl, cover with a warm towel, and let it rise until doubled in size, about 1 hour.
  7. Roll out the dough: Punch the risen dough down and roll it out into a rectangle about 10×15 inches.
  8. Add filling: Spread melted butter over the dough and sprinkle brown sugar and cinnamon on top.
  9. Roll up the dough tightly from the long side into a log.
  10. Cut into rolls: Cut the log into 12 rolls and place them in a greased baking dish.
  11. Second rise: Cover and let them rise for another 30 minutes as the oven preheats to 350°F (175°C).
  12. Bake for 25-30 minutes until golden brown.
  13. Prepare the glaze while rolls cool: Mix powdered sugar, milk, and vanilla until smooth.
  14. Serve and drizzle the glaze over the warm rolls.
