A decadent cheesecake cake infused with Baileys Irish Cream, layered with whipped frosting and garnished with chocolate shavings, perfect for celebrations.

- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 cup Baileys Irish Cream
- 4 large eggs
- 1 cup flour
- 1 cup chocolate chips
- 1 cup heavy cream
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (160°C) and prepare two 9-inch round cake pans by greasing and lining them with parchment paper.
- Prepare the crust by combining the graham cracker crumbs, 1/2 cup sugar, and melted butter, then pressing firmly into the bottom of the prepared pans.
- Make the cheesecake batter by beating the softened cream cheese in a large bowl until smooth. Gradually add in 1 cup of sugar and mix well.
- Incorporate the Baileys Irish Cream and mix until silky smooth.
- Add the eggs one at a time, mixing just until combined after each addition.
- Fold in the flour gently using a spatula until no streaks remain.
- Bake the cakes for 50-60 minutes or until the centers are set but slightly jiggly.
- Cool the cakes completely in the pans before removing them.
- Prepare the frosting by whipping the heavy cream until soft peaks form, then folding it into the remaining cheesecake batter.
- Layer the cakes with whipped frosting in between, smoothing the frosting around the sides and on top.
- Garnish with chocolate shavings and serve chilled.
Notes
For a gluten-free option, substitute graham crackers and flour with gluten-free alternatives. You can prepare the cakes a day in advance for the flavors to meld.
