Description

A savory quiche with crispy bacon, creamy cheddar, and a unique potato crust.


Ingredients

Scale
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 2 cups smashed potatoes (for the crust)
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the potato crust by pressing smashed potatoes into the bottom and up the sides of a greased pie dish.
  3. Whisk together the eggs and milk until fully combined and slightly frothy.
  4. Stir in the cheddar cheese and crumbled bacon, along with salt and pepper.
  5. Pour the egg mixture into the potato crust, making sure to fill it to the brim.
  6. Bake for 30-35 minutes, or until the quiche is set and golden brown on top.
  7. Allow to cool for a few minutes and garnish with chopped chives or parsley.
  8. Slice and serve warm.

Notes

You can prepare this quiche a day in advance and bake it just before serving. Feel free to add sautéed vegetables for extra flavor.
