- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 2 cups smashed potatoes (for the crust)
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the potato crust by pressing smashed potatoes into the bottom and up the sides of a greased pie dish.
- Whisk together the eggs and milk until fully combined and slightly frothy.
- Stir in the cheddar cheese and crumbled bacon, along with salt and pepper.
- Pour the egg mixture into the potato crust, making sure to fill it to the brim.
- Bake for 30-35 minutes, or until the quiche is set and golden brown on top.
- Allow to cool for a few minutes and garnish with chopped chives or parsley.
- Slice and serve warm.
Notes
You can prepare this quiche a day in advance and bake it just before serving. Feel free to add sautéed vegetables for extra flavor.
