- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1 cup brewed coffee, cooled
- 2 large eggs
- 3 cups apples, peeled and sliced
- 1/2 cup rolled oats
- 1/4 cup chopped pecans or walnuts (optional)
- Whipped cream or ice cream for serving (optional)
- Extra sugar for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Cream the butter and granulated sugar in a bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each.
- Stir in the cooled coffee until smooth.
- Mix the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture until just combined.
- Fold in the sliced apples gently.
- Prepare the streusel topping by mixing brown sugar, oats, and chopped nuts, then cutting in remaining butter.
- Layer the batter in the pan, topping with streusel.
- Bake for 35–40 minutes until a toothpick comes out clean.
- Cool slightly before serving warm with whipped cream or ice cream.
Notes
Allowing the cake to cool enhances the flavors. This cake can also be made in advance and served later.
