Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out some of the flesh to create a boat.
- In a bowl, mix the ricotta cheese with Italian seasoning, salt, and pepper.
- Fill each zucchini half with the ricotta mixture.
- Top with marinara sauce and sprinkle with mozzarella and Parmesan cheese.
- Drizzle with olive oil and place on a baking sheet.
- Bake for 25-30 minutes or until the zucchini is tender and the cheese is bubbly.
