Description

A hearty breakfast burrito filled with scrambled eggs, bacon, sausage, cheese, and crispy hash browns, perfect for any morning celebration.


Ingredients

  • 1 & 1/2 pounds thin-sliced bacon
  • 1 pound bulk breakfast sausage
  • 1 & 1/4 pounds cheddar cheese, shredded
  • 30 ounces frozen shredded hash browns
  • 1/3 cup bacon grease (or olive oil)
  • 1/2 cup butter (1 stick)
  • 1/2 cup chopped green onions
  • 4 ounces cream cheese, chopped into chunks
  • 15 large eggs
  • 1 & 1/4 teaspoons Lawry’s seasoning salt (or kosher salt)
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/4 cup butter for eggs
  • 15 (10-inch) flour tortillas, warmed
  • Optional: Sliced avocado, salsa, or hot sauce for serving

Instructions

  1. Preheat your oven to 400°F. Place bacon slices on baking sheets and bake until crispy, about 15-20 minutes.
  2. Once cooked, cool bacon slightly and chop into bite-sized pieces, reserving the grease.
  3. In a skillet, cook the bulk sausage over medium heat until browned and crumbled.
  4. Shred cheddar cheese and set aside.
  5. Cook frozen hash browns in the skillet with reserved bacon grease and 1/2 cup butter until golden and crispy.
  6. In a mixing bowl, whisk together eggs, Lawry’s seasoning salt, black pepper, and onion powder. Gradually fold in cream cheese.
  7. Melt 1/4 cup of butter in a non-stick skillet, add the egg mixture, and cook slowly until fluffy.
  8. Warm tortillas on a dry skillet or microwave until pliable.
  9. Assemble burritos with layers of hash browns, scrambled eggs, sausage, bacon, cheese, and green onions.
  10. Wrap by folding the sides of the tortilla inward and rolling from the bottom up.
  11. Store wrapped burritos in foil or bake at 350°F for reheating.

Notes

Can be customized with various fillings and sauces. Prepare the filling the night before for easier assembly in the morning.
