Description

A flavorful bowl featuring tender chicken in a creamy peanut sauce, vibrant broccoli, and fluffy rice or quinoa.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • Cooked rice or quinoa for serving

Instructions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the diced chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
  3. Toss in the broccoli and cook for an additional 3-4 minutes until bright green and just tender.
  4. In a bowl, whisk together the peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth.
  5. Pour the sauce over the chicken and broccoli, stirring to coat evenly and cook for 1-2 minutes.
  6. Serve hot over cooked rice or quinoa.

Notes

Allow chicken to marinate in soy sauce for an hour prior for deeper flavor. Adjust sauce thickness based on preference.
