- 1/4 cup cherry juice (reserve)

Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper.
- Combine 1 3/4 cups of flour, sugar, baking powder, and salt if using in a medium bowl.
- Whisk together eggs, oil, and reserved cherry juice in a large bowl. Add the almond and vanilla extracts.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in chopped maraschino cherries into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Press remaining cherries into the top.
- Bake for 55-65 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Make the glaze by combining confectioners’ sugar, cherry juice, and almond extract until smooth.
- Drizzle the glaze over the cooled bread.
