Description

Ingredients

  • 1 jar (10 ounces) maraschino cherries, divided
  • 1 3/4 cups + 2 tablespoons all-purpose flour, divided
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt (optional)
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/4 cup cherry juice (reserve)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper.
  2. Combine 1 3/4 cups of flour, sugar, baking powder, and salt if using in a medium bowl.
  3. Whisk together eggs, oil, and reserved cherry juice in a large bowl. Add the almond and vanilla extracts.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Fold in chopped maraschino cherries into the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Press remaining cherries into the top.
  8. Bake for 55-65 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Make the glaze by combining confectioners’ sugar, cherry juice, and almond extract until smooth.
  11. Drizzle the glaze over the cooled bread.
