- 4 boneless, skinless chicken breasts
- 1/2 cup mango puree
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C) or heat a skillet over medium-high heat to prepare for cooking.
- Create the glaze: In a mixing bowl, combine the mango puree, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and a dash of salt and pepper. Whisk until smooth.
- Marinate the chicken: Coat chicken breasts with the glaze and let them marinate for at least 20 minutes.
- Choose your cooking method: For oven-baked, place on a baking sheet and bake for 25-30 minutes until cooked through. For skillet-seared, add to the hot skillet and sear for about 6-7 minutes on each side.
- Rest the chicken before drizzling any remaining glaze over it.
- Garnish with freshly chopped green onions before serving.
Notes
Make-ahead by marinating chicken overnight for maximum flavor. Substitute chicken thighs for richer taste if desired.
