- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened

Instructions
- Preheat your oven to 350°F (175°C).
- Mix the softened butter and sugar together until light and fluffy.
- Add eggs, mixing one by one before the next.
- Pour in the vanilla extract and lemon zest.
- Combine the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, alternating with milk.
- Fill the cupcake liners about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool before frosting.
Notes
Make sure not to overmix the batter for fluffy cupcakes. Frosting can be made just before serving for freshness.
