Description

Delightful cupcakes that embody all the flavors of summer with soft, fluffy cake and vibrant frostings.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the softened butter and sugar together until light and fluffy.
  3. Add eggs, mixing one by one before the next.
  4. Pour in the vanilla extract and lemon zest.
  5. Combine the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry mixture to the wet mixture, alternating with milk.
  7. Fill the cupcake liners about two-thirds full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool before frosting.

Notes

Make sure not to overmix the batter for fluffy cupcakes. Frosting can be made just before serving for freshness.
